By comparing a steak’s tenderness to the soft part of your thumb as you touch each finger to the tip of your thumb, you can tell how done it is.

You can also stick a knife (close to the center) into the center thickness of meat and hold it for a couple seconds. Pull it out and place it to your lower lip. You won't burn yourself! If the knife has warmed from room temp you should get medium rare.
Also, ALWAYS let your steaks rest for 5-10 min before cutting in. Do not check temp by slicing into the steak. That juice is important and needs to reabsorb!
